Ginger Scones

Ingredients:

- one bottle of Ginger Beer (non-alcoholic ginger soft drink)
- 5-7 pieces of candied Ginger
- 1 Tbs of minced ginger (like Christoper Ranch Ginger, or mince your own)
- 1 tsp dry ground ginger powder
- Low-Fat Bisquick mix (or regular if you prefer)

Preheat oven to 300 deg F. Cut the candied ginger into small pieces, use more than listed above for a stronger ginger flavor. In a large mixing bowl, pour the ginger beer, and add all the varieties of ginger. Mix Bisquick into the liquid until it is dry enough to start kneading with your hands (takes several cups). Knead for a couple of minutes until all the ginger pieces are well mixed into the dough. Pat out onto a flat (floured) surface until the dough is about 3/4 of an inch thick, use a sharp knife to cut into squares or triangles (depending on preference). Place on an ungreased cookie sheet and bake until lightly golden brown and cooked through (typically 9-12 minutes depending on thickness of dough). Makes a whole bunch... (more than a dozen nice sized scones). For smaller batch, drink half the ginger beer before starting.

Great fresh from the oven, or cut in half and lightly toasted in a toaster (this is the main reason I don't like the dough to be too thick, you can't put them in the toaster later...).
